I want to test the knowledge of the field force with a quiz since I am the sales training manager.
Can we see the results and given answers to each question for every single person with their names and surnames?

The simplest way would be to setup an email action that would send you the quiz results when the respondent completes the survey/quiz- https://help.surveygizmo.com/help/send-quiz-score-in-email
If you want to see the responses given to each quiz question, you will have to add the appropriate merge codes to the email body – https://help.surveygizmo.com/help/merge-code-intro
You could also use the ADVANCED feature within the email action to attach a copy of the survey/quiz responses in PDF format. This features also has an option for including the quiz score – https://help.surveygizmo.com/help/send-a-survey-respondent-a-copy-of-their-response#send-a-pdf-with-the-survey-response-instead
