I’m wanting to be able to have an email with survey results sent to me as soon as the surveys are filled out. Is this possible? If so, how?
At the bottom of the THANK YOU page there are several email actions available. Select the option to send yourself an email when the survey has been completed. Edit the message and add the merge code that will merge all of the responses into the email.

I think the best approach would be to create separate reports for each merchant (assuming that you have a question that would allow you to filter by merchant).
In addition to the built-in email actions, you can add other ACTIONS to the thank you page, so it should be easy to create a separate email action for each merchant
